Arancini

Arancini would have to be one of my favourite foods in Sicily. They have a crusty outer layer with rice and gooey tastiness inside. The classic Arancini is Ragu, but they have a few different flavours, like pistachio, butter, squid ink etc

Pasta Alla Norma

This dish is well known on the east side of the island. It’s a combination of aubergine, tomato sauce and salted ricotta, served with tight curly pasta.

Caponata

There are about 10 different kinds of Caponata and every one has a different recipe using the vegetables that are available, but cooked aubergines are always at the base. It’s pretty much a combination of warm veggies in a bowl. It doesn’t sound exciting but it really is delicious!
